The Cassissier is a bushy shrub from 1m to 1.5m, cultivated in France since the 16th century for its fruits, more recently for its buds. The blackcurrant entered the customs after 1945, thanks to the famous aperitif of Canon Kir, based on white wine and blackcurrant cream. All the aerial parts of the cassissier can be used. The fruits are rich in vitamin C and flavonoids. The leaves and buds have very interesting properties. The latter, very rich in petrol, are harvested between mid-December and mid-February.
