A small tree 3 to 4 m tall, the bergamot is the result of hybridization of the bitter orange tree with the lime tree. It is grown mainly in West Africa, Italy and Spain.
Its fruit, from which the zest is extracted, has been widely used in Italian folk medicine. Its name comes from Bergamo, where bergamot was used to combat fevers.
Its distinctive fragrance is widely used in perfumery and cooking. Its delicious fragrance can be found in eau de Cologne, Earl Grey tea, Bergamotes de Nancy or in certain dishes and jams.
