Hay fever season is here, so I thought I’d whip up a recipe for you using these two wonders!
An anti-inflammatory and ketogenic blackcurrant and raspberry panna cotta.
INGREDIENTS:
400 ml coconut milk 22% (or higher)
2 sheets gelatin
40 g erythritol x monk fruit (Lakanto)
1 tablespoon organic blackcurrant hydrolate
RASPBERRY JAM
1 cup (240 ml) frozen raspberries
1 tbsp. erythritol
1 tbsp. chia seeds
1 to 2 drops tarragon essential oil
Soak the 2 gelatine sheets in cold water for 10 min. Pour coconut milk and erythritol into a saucepan and bring to the boil. Remove from the heat, drain and add the gelatine leaves, whisking to dissolve them in the coconut milk mixture. Let cool before adding the blackcurrant hydrosol. Pour into 6 ramekins and chill in the fridge.
Place raspberries, erythritol and chia seeds in a saucepan. Bring to the boil, stir and allow to cool. Add the tarragon essential oil, mix well and spoon over the frozen panna cotta.
Leave to stand for at least 4 hours.
